  • Baking safe & sound: Cleanliness is key, Staff, Fabulous food, Building, equipment & utensils, Fire, HACCP, Hygiene audits
  • Right recipe process: Bakery process perfect, Range planning, ordering, Receiving & storing, Production, Presentation & packaging, Point to process, Master merchandising

Phase 2:

  • Cater to the customer: Customers, promotions, Special orders, Allergens
  • Marvellous management: Your  Staff
  • Business Wise: Making the money, Stock taking, Costing clarity, perfect pricing
  • The Amazing Cake Race: Team based competition. Delegates need to implement the recipe & costing exercise
